Brauerei Sutton is a small independent Swiss craft beer brewery set up in the old butcher's shop in the Engelberg valley town of Dallenwil in Central Switzerland. We specialise in brewing traditional/modern premium real ales the old-school way. Brauerei Sutton's award winning "Swiss Real Ale" is brewed with the pure Swiss mountain water from the Kanton of Nidwalden. This amazing water has no chlorine content, is relatively hard and contains good levels of a variety of important minerals; so in these ways, it is very similar to the famous brewing water of Burton-upon-Trent, England, the spiritual home of English real ale brewing and also the town where Tim Sutton was born and grew up. Brauerei Sutton's premium quality Swiss real ales are brewed using all-grain English real ale brewing methods. Our English-style ales are brewed with Maris Otter pale ale malted barley sourced from the 1855 Warminster Maltings in England; a wide variety of classic English hops and pure Swiss mountain water. Secondary fermentation/conditioning of the ales happens in the vessel from which the ales are served; so our ales are genuine "Real Ale" (please see the CAMRA accreditation on our Awards page). This means of course, that the ales are unfiltered, unpasteurised and no extra CO2 or Nitrogen is added to help serve them or to help make them fizzy. Our ales become fizzy naturally (from the secondary fermentation in the bottle) and they will continue to condition/improve/mature for years if they are stored (lagered?!) in a cool, dark place in an upright position.
